Senyoret’s rice

We find a new variety of rice inspired by the sea. Specifically, it owes its name ‘del senyoret’ (‘of the gentleman’ in Spanish) because it is a seafood rice but for “gentlemen”, that is to say, with peeled shrimps, mussels without their shells, cuttlefish cut into small pieces, so that you don’t have to stain your fingers or even use a knife. A tradition that goes back many centuries in the wealthiest houses of the Municipality of Valencia, where the staff peeled the seafood for the “gentlemen” of the house..
