Valencian Paella

Valencian paella has become one of the icons of Spanish gastronomy. From this dish of humble origins, first described in the Albufera of Valencia and cooked in a paellero (a wide flat pan with handles) came the rest of the range of rice dishes that adapt to the tastes of each client.
